Ingredients (serves 4):
8 medium red potatoes
3 garlic cloves
1/3 cup olive oil
Rosemary to taste
Salt and pepper to taste

This is a very simple but tasty recipe that’s comfort food for many folks, served up with breakfast, lunch, or dinner interchangeably.

Preheat your oven at 400 degrees while you cube the potatoes and chop the garlic cloves. As with many garlic dishes, the finer you chop or mince the garlic, the stronger the taste, so adjust according to how you prefer your garlic.

Mix cubed potatoes, garlic, olive oil, salt, pepper, and rosemary in a bowl until the potatoes are thoroughly coated.

Spread the potatoes on a baking dish and cook for about 30 minutes, stirring them around once after about 15 minutes.

If you like your potatoes on the crispier side, you can finish them on your stove’s broiler setting for about five minutes.
